14 Nov Le Moulin de la Barde in Perigord
In the world of French food, “Perigord” is synonymous with “truffles”, black truffles to be more specific. The word itself suggests an entire world, a world of luxurious sophistication, elaborate multi-course meals accompanied by equally legendary wines. This romantic vision of times past totally captivated me as a young aspiring chef. I scoured the classic texts of French “haute cuisine” while attempting to duplicate the extravagant menus I unearthed. Another aspect of this upscale image of Perigord and truffles is one of tradition and rustic charm, farmers with their loyal dogs sniffing out the culinary treasures buried under ancient oak trees.
