The market was bustling with vendors and shoppers. The one thing we had anticipated was all things duck—duck prosciutto, duck pate, duck confit and rilletes, fois gras and more. Southwest France is famous for duck among many other things. What we hadn’t anticipated was the food show we walked into. Enormous paella pans steamed and simmered, bubbling with cassoulet, bright red Chicken Basquaise (a frequent special at Bistro-to-Go), and fragrant duck confit simmering along with tiny roasted potatoes, their skins blistered and crisp.
