Barbados Beach and Market Finds

When I see turmeric, ginger, hot chili peppers, and tamarind, I immediately think of curries. Especially when I see these along side okra, pumpkin, squashes etc. I adore curries of any kind and especially love the little condiments that often accompany them, tamarind being one of my favorites. As we were walking through the markets in Barbados’ capitol city of Bridgetown, we stopped at one vendor’s cart that had a large pile of tamarind pods. Our guide pulled a handful of them out and asked us each to open the pod and taste what was inside. If you’ve ever used a tamarind paste that comes in a jar, you know it’s a sweet, slightly sour and sticky substance. That’s exactly what we tasted upon opening the pod….
